About Silverthorn:

All of Silverthorn Wine's grapes are grown on the small estate situated in the Robertson Valley of South Africa. The owner and winemaker John Loubser enjoys a big reputation as a Cap Classique maker. Silverthorn produces only Cap Classique sparkling wines- made in the esteemed traditional method with a second fermentation in the bottle. These wines are hand harvested and gently whole cluster pressed with a low recovery rate of 500 liters per ton of grapes. All wins are manually riddled and disgorged.

The soils are limestone-rich but not of marine (ocean floor) origin but, rather come fron huge calcified ancient termite mounds. Because of the limes one, Robertson is known as the valley of Chardonnay, roses and horses.
